Why are there new descriptors? How do I select the desired descriptor to be active?

Immediately after creation, there are 8 (pub) descriptors in the wallet. Of the first descriptors, no more than two addresses are used. After a while, there are already 16 descriptors, while the "old" descriptors become inactive and new addresses are seeded from the new descriptors. Where do the new descriptors come from? How do I select the desired descriptor to be "active"?
